The starter:

Spinach salad with bacon, blue cheese and whiskey vinaigrette: 

Ingredients:

¼ cup Whiskey (Any whiskey you prefer)

¾ cup Olive Oil

2 Tbsp Apple Cider Vinegar

1 Tbsp Honey

1 tsp Sea Salt

½ tsp Black pepper

Bacon

1 cup Spinach

½ pecan nuts

1 Green Apple

½ Cup Blue cheese

DIRECTIONS:

  1. In a small saucepan over medium heat, bring Whiskey to a boil. (If the alcohol in the Whiskey ignites, quickly cover saucepan with a tight-fitting lid to tamp out the flame; then remove the lid.) Cook until liquid is reduced to about 2 tablespoons, (about 3 to 4 minutes). Transfer to a ramekin and refrigerate until well chilled.
  2. In a small bowl, whisk together olive oil, vinegar, honey, salt, pepper, and reserved Whiskey. Set aside.
  3. In a small skillet over medium-low heat, cook bacon until crispy (about 5 to 6 min). Transfer to a paper-towel-lined plate. Set aside.

In a large bowl, combine spinach, pecans, apple, blue cheese, and reserved bacon. Toss gently with reserved vinaigrette.
