If you want to have some fun and really blow your friends minds you should give these gin popsicles a try. They take a little more planning and prep, but the look on your friend’s faces will make it all worth it. You could also do any flavour and use a delicious store-bought cordial instead of making your own and it will take you half the time.
This is a lovely way to turn your regular gin and tonic into an amazing cocktail. And let’s be honest, just make a few extra and pop one out on a summers day.
Ingredients:
For the syrup:
- 3 plums with the pip removed
- 2 all spice berries crushed
- 1 cup sugar
- 2 cup water
- 200ml gin
For the cocktail:
- Tonic
Method:
To make the syrup place the plums, allspice berries, sugar and water into a small pot and bring to a boil, then allow to simmer for 20 minutes or until it forms a thin syrup.
Strain the syrup through a sieve to get the plums and spices out and set aside to cool. Once it is cool you can mix in the gin and then divide between 4 popsicle molds. Place them carefully into the freezer to set them overnight.
When you are ready to serve place a popsicle in a glass and then top with tonic water.
