Ingredients:
For the syrup:
- 3 plums with the pip removed
- 2 all spice berries crushed
- 1 cup sugar
- 2 cup water
- 200ml gin
For the cocktail:
- Tonic
Method:
- To make the syrup place the plums, all spice berries, sugar and water into a small pot and bring to the boil, then allow to simmer for 20 minutes or until it forms a thin syrup.
- Strain the syrup through a sieve to get the plums and spices out and set aside to cool. Once it is cool you can mix in the gin and then divide between 4 popsicle molds. Place the carefully into the freezer to set overnight.
- When you are ready to serve place a popsicle in a glass and then top with tonic water.
