Ingredients: 

For the syrup: 

  • 3 plums with the pip removed 
  • 2 all spice berries crushed 
  • 1 cup sugar 
  • 2 cup water 
  • 200ml gin 

 For the cocktail: 

  • Tonic 

 

Method: 

  1. To make the syrup place the plums, all spice berries, sugar and water into a small pot and bring to the boil, then allow to simmer for 20 minutes or until it forms a thin syrup.  
  2. Strain the syrup through a sieve to get the plums and spices out and set aside to cool. Once it is cool you can mix in the gin and then divide between 4 popsicle molds. Place the carefully into the freezer to set overnight. 
  3. When you are ready to serve place a popsicle in a glass and then top with tonic water.
