This one is great for an evening drink before dinner to make you feel fancy. It’s also berry season, so we are using them in everything. Berry cocktails are the best and paired with the Roku Japanese Gin and a smoking rosemary sprig you really can’t go wrong.

Ingredients: 

  • For the simple syrup: 
  • 1 cup white sugar 
  • 1 cup water 

 

For the cocktail: 

  • 2 x Double shots (100ml) Roku Japanese Gin 
  • 6 Black berries 
  • 1 x Double shot simple syrup (50ml) 
  • 3 Sprig rosemary 
  • Soda water 
  • Ice 

Method: 

  1. To make the simple syrup just combine the sugar and water in a small pot and heat until the sugar has dissolved. Allow to cool before using in your cocktail. 
  2. For the cocktail add the gin, blackberries, simple syrup, 1 rosemary sprig and ice to a cocktail shaker and shake well until well combined. Pour the cocktail through the strainer into 2 martini or champagne glasses then top with soda water.
  3. Use a lighter to light the rosemary just until it is smoking and place on top of the glass.
