In Tipsy Tips


Summer Time is the perfect time to make some ice pops, and what better way to enjoy a little party than with cocktail pops! We’ve pulled a few recipes together along with some tips from The Inner Circle. If you don’t have Ice Pop moulds, then you should invest in some! We can recommend the awesome Zoku Pop Moulds or Quick Ice Pop Maker which you can buy from Yuppiechef.

  • Leave some space at the top of the mould for the mixture expands when it freezes.
  • For fizzy/carbonated drinks, you should let the mix go flat first.
  • Alcohol does not freeze well so you should keep the alcohol ratio low. 1:5 is a good go-to ratio, 1 part alcohol with 5 parts mix.
  • The Zoku Pop moulds have silicon making them easy to get out/serve. If you need to loosen the lollies, then run the mould under some warm water for a few seconds. Serve before they melt!

Gin and Tonic Popsicle
A classic for your classy tea parties that is not too sweet and seriously delicious.
50ml Gin (Brand of your choice)
300ml Tonic (flat)
Half a lime

Mix all the gin, lime juice and tonic together. Pour into moulds, and place into the freezer overnight. If you want some colour to the lolly, you can place thin slices of cucumber in the mould.

Vodka and Watermelon Lolly
Watermelon is summery, refreshing and naturally sweet!
50ml Absolut Vodka (Or vodka of choice)
¼ cup sugar
Mint leaves
Watermelon, sliced into chunks

Pour the vodka, sugar, and watermelon chunks and mint leaves into a bender (it should create roughly 350ml of mixture). Pour into moulds and freeze overnight. You could also blend up the watermelon into a liquid form and exclude the sugar.


Pina Colada Popsicle
50ml Malibu
3 cups pineapple, blended into a puree
2 cups coconut milk
2 tsp raw coconut oil
pinch of salt
1 cup pineapple, diced

Combine the rum, pureed pineapple, coconut milk, salt and oil into a blender, and mix until smooth. Then distribute the diced pineapple into the moulds first, and then fill with the blender mix. Put into the freezer overnight.

Sangria Popsicle

1.5 Cups Red Wine
2 Tablespoons Sugar
1 Cup Pomegranate Juice (Sir Juice)
1 Cup fresh raspberries or strawberries

Combine red wine and sugar in a small saucepan. Cook on low until sugar dissolves. Take off of the heat and cool. Stir in pomegranate juice and set aside. Divide the raspberries (or strawberries) evenly into the popsicle moulds. Pour sangria on top of the fruit into the moulds. Freeze overnight and enjoy!
