Celebrate the love of chocolate on World Chocolate Day with these scrumptious chocolatey, double boozy brownies. You can use Red Hart, or Havana Club rum when baking.



1 cup of butter

1 slab milk chocolate

½ cup cocoa powder

1 tpsn salt

1 tpsn vanilla essence

3 eggs

1/3 cup rum


1/ cup sugar

1 ½ tbs water

¼ cup cream

1/3 cup rum

Sprinkle of course sea salt



Preheat your oven to 180 degrees, and oil an oven tray at least 2 cm thick.

Melt butter and chocolate on a very low heat, and keep stirring until smooth.

Remove from heat and stir in cocoa, sugar, salt and vanilla.

Beat in egg one at a time, until thoroughly mixed.

Sift in the flour, then rum and mix until smooth.


Pour into your oven dish, and bake for 25-30 minutes or until a knife comes out clean. Allowed to cool before cutting.


Add water and sugar to a saucepan and bring to boil – don’t stir!

Boils for 6-8 minutes until a deep caramel sauce forms.

Remove from the heat and pour in the cream.

Add the rum and stir until combined. Store until you are ready to serve.

Sauce can be reheated in the microwave.
