Winter is citrus season in South Africa, and the perfect time to try out a spicy winter cocktail with deep, complex grapefruit flavours. To sweeten and add some herby aromatics, we use a thyme and rosemary syrup.
Sprigs of fresh thyme
1 spring of fresh rosemary
½ cup sugar
½ cup water
3 grapefruits, juiced
4 shots of vodka (or more of less, if preferred)
Combine thyme, rosemary, sugar and water in saucepan, on a medium heat and allow to simmer, stirring occasionally.
Remove from heat once the sugar is completely dissolved, but before boiling.
Allow to cool completely and for the herb flavour to infuse (about 30 minutes).
Strain the syrup.
When ready to serve, shake the syrup and freshly juiced citrus together with ice. Fill your glasses with ice and pour the cocktail blend evenly into your glasses. Garnish with a fresh sprig of rosemary and a slice of grapefruit.
