What’s better than sharing a beautiful sunny afternoon sipping a crisp rosè and snacking on a creamy and crunchy salad with your friends during women’s month. We love the combination of the berry and goats cheese flavours with the fruity crispness of the wine. We used the Simonsig Chenin Blanc and pinotage rosè because it is the perfect compliment to this salad…. Or the other way around really. 

 

Ingredients: 

  • 1 bag baby gem lettuce 
  • ½ cup blueberries cut in half 
  • 6 snap peas sliced 
  • ¼ cucumber sliced 
  • 1 roll chevin goats cheese 
  • 1 small handful mint leaves 
  • Olive oil 
  • Orange juice 

 

Method: 

  1. In a large salad bowl, pick the gem lettuce and lay in the bowl. Layer on the cucumber, goats cheese, snap peas and blueberries and then pick the mint leaves and scatter on top.
  2. Drizzle on some olive oil and squeeze on the juice of half an orange. 
  3. Enjoy.
