Ingredients: 

  • 1 ½ cups warm water 
  • 2 tsp dry yeast 
  • 1 tsp salt 
  • 1 TBS brown sugar 
  • 1 TBS melted butter 
  • 4 cups all purpose flour 
  • 1 egg 
  • Coarse salt 

Bath: 

  • ¼ cup bicarbonate of soda 
  • 6 Cups of water 

 

Method: 

  1. Heat the oven to 200C. 
  2. Whisk the water and yeast together and allow to sit for a minute – Make sure the water is not boiling or the yeast will not activate. 
  3. Whisk in the salt, sugar and melted butter then slowly add in the flour and mix with a wooden spoon until combined then use your hands to knead it together into a smooth ball.  
  4. Cover and set aside to rise until double its size. 
  5. Bring the bath to a simmer with the 6 cups of water and bicarbonate of soda. 
  6. Then on a floured divide the dough into 8 pieces and roll into hot dog shapes and allow to rise again. 
  7. With a slotted spoon gently lower a few into the bath at a time and allow to cook turning for 1 minute. Take out of the water and drip dry, then place on a greased baking sheet.  
  8. Brush all the buns with a whisked egg and sprinkle with rock salt. 
  9. Bake for 15 – 20 minutes until golden brown. 
  10. Serve with bratwurst, mustard and sauerkraut and ofcourse some German beer.
